5 Summer Refreshments to Sip and Relax

It’s a hot summer day, with the bright sun shining down on you, a nice breeze blowing your way, and you’re sitting on your patio relaxing. But one ingredient is missing. The perfect drink! Here are five great cold summer drink ideas, to make when you’re feeling fruity, in need of caffeine, or even just wanting to try something new!


1. Raspberry Vanilla Soda












Ingredients(Serves 4):

  • 1/4 cup water

  • 1/4 cup sugar

  • 1 cup fresh raspberries

  • 1 tbsp lemon juice

  • 1 tsp vanilla extract

  • Club soda, sparkling water or anything similar

  • Ice


This homemade soda is bubbly, refreshing and bursting with flavour! It only requires a few simple steps, and you’ll be sipping a fruity delight in just a few minutes. First, combine the water, sugar and raspberries in a saucepan over medium heat. Cook for about 5 minutes until the sugar has dissolved and the mixture is boiling. Reduce the heat, stir and cook for another 5 minutes until the berries are cooked down. Now you have your raspberry syrup! You can also mix and match your fruits, and try different flavours! Strain the mixture into a bowl(be sure to press down on the berries to squeeze the juice out), add the lemon juice and vanilla, and put it in the fridge to chill! To serve, fill a glass with ice, add 3 tablespoons of the raspberry mixture, and fill the glass with club soda. Enjoy!


2. Popsicle Punch















Ingredients(Serves 6):

  • 4 cups. lemon lime soda

  • 4 cups lemonade

  • 1 (12-oz.) can club soda/sparkling water

  • 1 cup sliced strawberries, plus more garnish

  • 2 mangoes, cubed, plus more for garnish

  • 3 Popsicle Strawberry Fruit Pops

  • 3 Popsicle Mango Fruit Pops


One of the worst things about summer drinks is when they get watered down as the ice melts. This drink provides the solution! Instead of ice, they’re using fruit flavoured popsicles! In a large jug, stir together all the ingredients, place a popsicle stick in, and add some strawberry and mango slices around the rim! If the popsicle hasn’t melted by the time you finish the drink, you now have a tasty treat as well!


3. Sparkling Blueberry Lemonade














Ingredients(Serves 8):

  • 2/3 cup white sugar (superfine is best)

  • 2/3 cup water

  • 1 and 1/2 cups fresh blueberries

  • 1 teaspoon lemon zest

  • 1 cup freshly squeezed lemon juice (~4-5 whole large lemons)

  • 2 cups ice cubes

  • 3 cups sparkling water or club soda (my favorite is sparkling lemon lime water)


If you’re into Starbucks lemonades and refreshers, you will love this drink. Similar to the Raspberry Vanilla Soda above, start with bringing the sugar, water blueberries and lemon zest to a boil, then reduce to a simmer for 5-10 minutes(until the sugar has dissolved and melted and the blueberries are bursting). Strain the mixture then leave it to cool. While this is cooling, juice the lemons, then mix the blueberry syrup, lemon juice and ice in a large pitcher. Stir in the sparkling water, and enjoy your fizzy, fruity, flavourful lemonade!


Note: If you do not plan on finishing the drink right away, store the blueberry syrup and soda separately. Mix immediately prior to serving.


4. White Iced Tea













Ingredients(Serves 4):

  • 4 white tea bags

  • 4 cups water

  • 1/2 cup sugar

  • Fresh tarragon sprigs, to taste


If you’re more of a tea type of person, and aren’t that interested in fruity flavours, here's a drink for you! Steep 4 white tea bags in 4 cups of boiling water then chill. Dissolve the sugar in another cup of water and bring to boil, add the tarragon, then let cool. Add some of the tarragon mixture to the tea, add ice and enjoy! Experiment with different herbs, such as rosemary, lavender, or mint and create new summer flavors!


5. S’mores Iced Coffee














Ingredients(Serves 1):

  • 1 cup Iced coffee(Coffee grinds, water and ice)

  • ¼ cup Chocolate milk

  • ~ ¼ cup Whipping cream

  • 1 tbsp Powdered sugar

  • Marshmallow bits/mini marshmallows

  • Crushed graham cracker


Everyone loves s’mores! They’re chocolate, graham crackers and marshmallows - what’s not to like? If only it could be combined with another great decadence in the world: coffee...That’s right it can! To make a s’mores iced coffee, beat whipping cream until soft peaks form(tops should flop over when lifting whisk/mixer). Add a tablespoon of icing sugar and beat until stiff peaks form(tops should NOT flop over when lifting whisk). Gently stir in marshmallow bits or mini marshmallows. Next, pour the chocolate milk into the iced coffee(add some whip cream as well if you want a thicker, creamier drink), top with the marshmallow cream and garnish with crushed graham crackers! Curl up with a book, enjoy it outside, or sit around a campfire - this drink will make any summer stand out.


Note: This coffee is made best with a cold brew. To make this, leave coffee grinds in cold water for a few hours(overnight works as well), then run it through a paper filter or cheesecloth. However, you can also brew coffee normally, then leave it in the fridge to chill.
